Breakfast Burrito

I love breakfast! And I love to make good, big breakfasts on the weekends. When I don't have time to cook in the morning before work, I usually just have something quick, like a whole wheat, light english muffin or some yogurt and fruit. When I don't have anything in the house that is quick to eat before work, I will usually stop at Dunkin Donuts and get their egg and cheese wake up wrap (only 4 points plus!). This is the best breakfast item I have found at a fast food restaurant in regards to WW points. Have you heard that Taco Bell is now serving breakfast?! I don't even want to think about what they have or how many calories and points are in their breakfast items. Yikes!


Anyways, this breakfast burrito is loaded with eggs, veggies, cheese, and even bacon! I used Oscar Mayer Fully Cooked Bacon but you can certainly use a center-cut bacon, just cook it beforehand. This recipe makes two and one definitely filled me up with a side of fruit and some coffee. Enjoy!


Ingredients:
  • Cooking Spray
  • 3 Egg Whites (or egg white substitute)
  • 1 tbsp Red Bell Peppers, chopped
  • 1 tbsp White Onion, chopped
  • 1/2 cup Baby Spinach
  • 2 slices Oscar Mayer Fully Cooked Bacon, chopped (or any lean center-cut bacon)
  • 1/4 cup Shredded Fat Free Cheddar Cheese
  • 2 La Tortilla Factory SMart & Delicious Low Carb High Fiber Tortilla




Spray a medium pan with cooking spray and heat over medium low heat. Add onions and peppers and cook until tender and onions are slightly translucent, about 3 minutes. 




Add baby spinach and cook until the leaves have wilted down. Add bacon and allow it to heat through.




Next, add egg whites, breaking up as they set. Spread the cheese on to two tortillas. Once the eggs are fully cooked, place half on each tortilla. 




These will be full, so if taking them to go, wrap in aluminum foil and you're all set! If not, roll up and use a toothpick to secure the edges.
