Turkey, Bacon, and Cheese Lettuce Wrap

The first time I had a lettuce wrap it was more of a lettuce "bowl" and we filled it with chicken, veggies,  and different sauces. I wanted something that would be easy to carry and not make a huge mess if I brought it to work with me for lunch. I originally wanted to find a sandwich shop in my area that would make lettuce wraps for me, but I did not find anything. The closest and best looking one I did find is at a place called Jimmy John's. I've never been but the website shows that they make this delicious looking lettuce wrap called the Unwich. Unfortnately it's a bit of a hike...all the way to Philadelphia for the closest one. So I decided to make my own. It was really easy and I didn't have to go out and buy it!

This is actually really filling, despite the fact that there is no bread. I like sandwiches on really yummy bread--actually I love bread in general, just not all the points. But with this lettuce wrap, you won't miss the bread at all. I used ingredients that I had on hand, but you can make it with whatever you like on your sandwich. I used iceburg lettuce as the leaves are large and easy to roll up. I have tried this with romaine because the nutritional value of romaine is definitely better than iceburg, but it was a lot harder to roll and keep together.

Ingredients:
  • 1 1/2 large Iceburg Lettuce Leaves
  • 1 tbsp Low Fat mayo
  • 2 slices Oscar Mayer Fully Cooked Bacon (or cooked center-cut bacon)
  • 2 oz Lower Sodium Oven Roasted Turkey Breast (I used Hillshire Farm)
  • 2 slices Tomato
  • 1 Slice Fat Free American Cheese Singles


Overlap lettuce leaves. In this picture the bottom of the lettuce leaves are on the left. I found it easiest to roll from the bottom to the top (so left to right in this picture). Spread mayo over the middle.

Roll lettuce around toppings from the bottom of the leaf to the top.
Wrap in aluminum foil. Tear foil as you eat. This makes for a very portable lettuce wrap!
