This is a no-brainer. It is so easy to make but I figured I should post this because I make these all the time for a quick and healthy breakfast before work.
A simple egg sandwich, with low-fat ingredients makes a very healthy and filling breakfast. Egg sandwiches can be high in calories and fat, depending on what kind of cheese, meat, and bread you use. I chose a light, whole wheat english muffin, fat free cheese, and lean bacon for this sandwich. Fat free cheese does not melt very well and doesn't have nearly the same consistency as regular or even low fat cheese but, I really only use it in sandwiches because when it is surrounded by all the other ingredients, you can't tell that it's that much different. And it is only 1 Point+ per slice :)

Ingredients:
- 1 Light Whole Wheat English Muffin
- 1 large Egg
- 1 slice Fat Free American Cheese
- 2 slices Lean Bacon (I used Oscar Mayer Fully Cooked)
- 4-5 Baby Spinach Leaves
In a small pan, cook bacon until crisp. Remove from pan and let drain on paper towels.
Spray pan with cooking spray. Fry the egg to whatever preference you like.
Meanwhile, toast the english muffin.
Top with cheese, bacon, egg, and spinach leaves.
Serve and enjoy! (See? It is wicked easy.)
