Light Avocado Ranch Dip

Ripe avocados, ranch dressing, lime juice, and cilantro are combined with Greek yogurt to make a creamy and light dipping sauce that goes perfectly with my Lightened Up Baked Chicken Taquitos. You can also serve this with tortilla chips or any other Mexican inspired meal. 

The key to this dipping sauce is the avocados. Overripe ones work best because they are easily broken down in the food processor or blender. This is a perfect way to use up those avocados that are a little too soft for anything else!

Ingredients:
  • 1/2 medium Avocado
  • 2 tbsp Non Fat Plain Greek Yogurt, I used Chobani
  • 1 tsp Fat Free Ranch Dressing
  • 2 tbsp Fresh Cilantro
  • 1/2 tbsp Lime Juice
  • 1/4 tsp Salt
  • 1/2 tsp Black Pepper


In a food processor or a blender, combine all ingredients and pulse until mixture is smooth and creamy.


If mixture is a little thick, add 1 tsp of water at a time until it is smooth. This really depends on the ripeness of the avocado.


Serve as a dip for tortilla chips or for taquitos!
