Light and healthy mashed potatoes are seasoned with fresh herbs and loaded with garlic. At only 1 g of fat and less than 150 calories per serving, this is a great side dish that won't make you feel guilty. Mashed potatoes are the ultimate comfort food for me so having them healthier is a diet life-saver. Especially when I think these go best with a spoon :) I know there are tons of ways to prepare mashed potatoes and that people are very particular about the kind they like. I like mine with fresh herbs, garlic, and with lumps please. I don't like the perfectly smooth kind, they just don't feel home made to me.
I made these the way I like them. But you can choose to peel the potatoes and mash them until they are smooth. These potatoes are pretty garlicky, but because the garlic cloves are boiled with the potatoes, the flavor is slightly subdued (no garlic breath here!)
I served mine with my Pork Chops and Savory Blueberry Sauce, but these are great with turkey, pork roast, chicken, by themselves, or a little gravy :)

Ingredients:
- 2 pounds Potatoes (I used Baby Red)
- 8 cloves Garlic, whole
- 1/4 cup Fat Free Sour Cream
- 1/3 Cup Skim Milk
- 1 tbsp Light Butter (I used I Can't Believe It's Not Butter)
- 1 tbsp fresh Thyme
- Salt and Black Pepper to taste
Begin by quartering or cubing the potatoes and peeling the garlic.
Put potatoes and garlic into a large pot and cover with water. Heat over high heat and let boil for about 20 minutes, or until the potatoes are fork tender.
Drain potatoes and garlic. Return back to the pot. Add Sour Cream, Milk, and Light Butter. Mash together with a potato masher. The garlic should be easily mashed as well.
Stir in fresh Thyme and Salt and Black Pepper to taste.
Potatoes will stay warm if pot is covered. Scoop out 3/4 cup portions and serve warm.
